This recipe makes the most delicious, sweet yellow cornbread! It's moist and has a wonderful texture. I recommend using a cast iron skillet to bake it in, makes a yummy crisp outer crust!
What You'll Need:
1 Stick of Butter
2/3 Cup Sugar
1/4 Teaspoon Vanilla Extract
1/2 to 1 Teaspoon Honey, Depending on Taste
2 Large Eggs
1 Cup Buttermilk
1/2 Teaspoon Baking Soda
1 Cup Yellow Cornmeal
1 Cup All Purpose Flour
What To Do With It:
Preheat the oven to 375. Put the butter in the
skillet and watch closely so that it melts but
doesn't burn. Once the butter is melted, swirl
it around the sides to coat the skillet well, then
pour butter into a mixing bowl. Add eggs, and
beat until well blended. Combine buttermilk and
baking soda and pour into bowl. Whisk in
cornmeal, sugar, vanilla, flour, honey and blend well.
Pour batter into skillet, and bake for 25-30 minutes,
or until toothpick comes out of the center clean.
